VT -- Judy MacIsaac, co-owner of Highland Sugarworks, spent March 31, 2000 in beautiful Providence, Rhode Island speaking at
the annual IACP (Internation Association of Culinary Professionals)
annual conference. This year's conference boasted 1200 attendees,
with over 100 of the most recognized and respected food personalities,
chefs and newsmakers in the indistry leading the workshops.
Judy and
colleague Dr. Tim Perkins from the University of Vermont's Proctor
Maple research facility wowed their audience with folklore
and facts about Vermont's Native Sweetener -- maple syrup. Their panel
discussion titled Maple Sugaring: North America's Native Sweetner
was well attended. The questions were flowing, like a good sap run.
Attendees offered thought-provoking, interesting and enthusiastic
questions, and left the workshop with a too cute glass cabin-shaped
bottle filled with Vermont maple syrup.
The International
Association of Culinary Professionals is a unique and diverse organization
